Ingredients

  • 2 lbs Pork shoulder or pork belly
  • 1/2 cup Soy Sauce
  • 1/3 cup White Vinegar
  • 8 Garlic Cloves, pressed
  • 2 pcs Bay Leaves
  • 1 tsp Dried Ground Oregano
  • 1 tsp Whole black peppercorns
  • 1 tbsp Avocado Oil
  • 1 cup Water
  • Salt to Taste

Instructions

  • Heat oil and brown pork on all sides.
  • Add garlic and cook until fragrant.
  • Pour in soy sauce, vinegar, water, bay leaves, oregano and peppercorns.
  • Allow vinegar to boil for 2 minutes before stirring.
  • Cover and simmer 45–60 minutes until pork is tender.
  • Remove the lid during the last 10–15 minutes if you want a thicker sauce.
  • Serve over cauliflower rice.

Notes

  • Pork shoulder creates a leaner version.
  • Pork belly gives a richer flavor.
  • Leftovers taste even better the following day.
  • Store refrigerated for up to four days.
